Patatas bravas and crispy chicken strips bowl.

INGREDIENTS AND METHOD

Chicken strips

Panko breadcrumbs

1 egg

Onion granules

Garlic granules

Paprika

Tumeric

Chicken thighs

Mix all the dry ingredients into the Panko breadcrumbs.

Flatten the chicken slightly with a meat mallet or whatever comes to hand and then cut into strips.

Dip the chicken into the egg, then the breadcrumb mix, spray with oil and put thrm into the airfryer at 200 for approximately thirty minutes, making sure to turn them over and spray with more oil every five to ten minutes to ensure they are crispy all round

This will make the juiciest chicken strips which adults and kids both love.

Potatos

I use around eight rooster potatos and left the peel on. You could peel for a more authentic feel.

Get your potatos chopped washed and cubed seasoned with garlic granules and paprika. Covered in rapeseed oil and into the microwave in water for ten minutes then pop into the airfryer for fifteen to twenty minutes or until nice and golden,sprating with oil every few minutes.

IF you want a more traditional feel you can deep fry your potatos.

Patatas bravas sauce

Rapeseed or olive oil 200ml

Garlic granules

Smoked paprika 2 tablespoons

Sweet paprika 3 tablespoons

Chilli flakes 2 tablespoons

Onion powder 2 tablespoons

Tomato puree

Red wine vinegar – 2 tablespoons

Chicken stock 500ml

Flour 1 to 2 tablespoons

Salt and pepper seasoning

Garlic sauce or garlic Aoili

Heat your oil at medium heat and add all the spices, then add your flour in and stir continuously with a whisk

Next slowly add in your stock whilst whisking all the time and then once all in add the vinegar and tomato puree in and allow to come together. Add more stock if you prefer a runnier sauce but this will give the perfect consistency to serve at least six generous portions.

For a slightly different twist to the sauce you could add chopped tomatoes to the sauce but we prefer a smoother sauce.

Once ready layer your potatos and chicken and drizzle over some garlic aoili and your homemade patatas bravas smokey sauce and enjoy this finger licking dish.

My children have told me this sauce works really well in Wraps and also with chicken and pasta so that’s a bonus that I can use the leftover sauce in another meal.
