Monday’s meals #9 My special spaghetti bolognese

Life being generally very busy at the moment and the fact that we are eating out and about or having quick dinners has meant I haven’t been online much as of late. Tonight’s meal is probably already a household staple in your own home but those who I have shared my own take of Spaghetti Bolognese have liked it and the extra bits that I do to mine, so maybe this is a little different to how you make yours . I’d love to hear what you think of my version and what you do to your own to spice it up. By the way this is one meal that my kids will eat several days in a row so I tend to batch cook it, serve it with whole-wheat spaghetti the first day for the kids, fusilli pasta the next, stuff a pepper with the mixture if I am doing a low carb meal or as pictured here serve it with wok fried greens.



5% lean steak beef mince

Punnet of mushrooms

1 large onion

2 cloves of garlic

1 tin of chopped tomatoes

1 400g Passata carton

3 tablespoons of Worcestershire sauce

1 tablespoon of tomato puree

1 beef stock pot

1 tablespoon of sundried tomato pesto

1 teaspoon of paprika

1 teaspoon of Italian herbs

1 grated carrot

1 grated corgette

1/2 chorizo sasuage

Serve with: wholewheat spaghetti, fusilli pasta or roasted tomatoes and whatever greens you have in the fridge.



In a heavy based pan fry up your onions for a few minutes then add your mince meat and chopped garlic. Add the mushrooms once the meat is near brown and stir in your beef stock pot adding a little water as you do so to the meat. Add the grated courgette and carrot and stir into the mix. At this stage add in your worcestershire sauce, paprika and mixed herbs, tomato puree, pesto,tinned tomatoes and passata and turn heat down to medium.

Fry up the chopped chorizo in a wok for three to four minutes then remove and add to the bolognese when serving.

Steam your greens over your pasta pot for several minutes. The spaghetti or pasta should be cooked perfectly in approx fifteen minutes, an average portion of pasta would be 60 grams per adult.

Leaving the oil from the chorizo in the wok add your steamed greens and flash fry them in the oils and set aside. I generally cook green beans, sliced courgette,long stem brocolli and asparagus.


Serve your bolognese with the chorizo , pasta/greens of choice and if you want to go the whole hog add in a slice of garlic bread and a nice glass of red wine for the sides 🙂
