Prawn spice bag

Ingredients

180g Atlantic prawns per adult

250g rooster potato per adult (chopped into chips with a little skin left on )

1 red pepper thinly chopped

1 yellow pepper thinly chopped

1 onion thinly chopped

1 large carrot thinly chopped

2 cloves of garlic thinly chopped

Sesame oil

Spice mix : 1 tablespoon Chinese five spice

1 tablespoon cumin

1 table spoon chilli flakes

1 tablespoon smoked paprika

1 tablespoon onion powder

Good helping of cracked black pepper and salt

1 tablespoon of mcdonnells original curry powder

Method

Pop your raw chips into a container into the microwave for ten minutes or steam them on the hob until they are soft

When done transfer them to an airfryer if you have one and cook with a little oil until crispy and golden

Next get your veg in a wok with some sesame oil and cook until the softness is gone from the veg be careful not to overcook the vegetables and ensure you take them off the pan with still a little crunch to them.

Next in the same pan add your prawns and cook until they turn pink .

Now add back in your veg, your cooked chips and your spice mix (you should mix this all together when prepping) and lightly toss throughout the wok. Drizzle another little sesame oil and allow to cook for another few minutes before serving as is which is my preference or with some additional curry sauce which others prefer.

Either way dry or with a sauce this is q dish with a kick but so yum I bet you will cook it more than once in a week.

Try this with panko breaded chicken top for an alternative to the prawns .
