Mondays meals #22. Homemade fish,chips and smokey beans.

Ingredients

Any cut of white fish -I generally buy what is on offer from my local Supervalu, generally cod or hake works best.

Panko breadcrumbs

egg

garlic granules

onion powder

paprika

tumeric

Salt

lemon pepper

Zest of a lemon

Lemon

Rapeseed oil

Potato of choice ( I generally use Roosters or Kerr pink) roughly peeled and washed

 

For the beans

Tin of cannellini beans

Tomato puree 4 tablespoons

Passata -half a carton

Chicken stockpot mixed with around 200ml of water

Worcestershire sauce 3 tablespoons

garlic granules 1 teaspoon

onion powder 1 teaspoon

smoked paprika 2 teaspoons

 

 

Method

FISH

Season your panko breadcrumbs with the garlic granules, onion powder, tumeric, paprika ,a little dash of salt and lemon pepper and the lemon zest. In a separate bowl have the egg beaten . Firstly dip your pieces of fish into the egg then your breadcrumb mix covering both side of the fish .

Pop the fish into either your Airfryer at 200 for fifteen minutes ( or until the transparent look is gone from the inside of the fish) or whichever setting is recommended depending on the model. You can also oven bake these on a sheet of baking paper in a fan oven of 180 for twenty to twenty five minutes or again until the fish is cooked through( break a little off and you will see all white when cooked and no hint of translucency)

CHIPS

Peel roughly, wash and then in a microwaveable bowl pop them into the microwave covered in water for approximately four minutes.

Then with some rapeseed oil put them into the airfryer for around ten minutes, making sure to use some more oil on them every few minutes and giving them a good shake as you do. You can also cook these in a standard fan oven for around twenty minutes or so.

 

SMOKEY BEANS

Empty your tin of beans into a pot and  all the ingredients and allow to simmer away for around fifteen minutes or so until you see a nice thick sauce develop in the beans. These are kid proof and you will never want to buy tinned beans again!

 

Squeeze some lemon over your fish when serving and there you have it a healthy but not lacking in taste , homemade fish chips and beans!
